The contact with the pastures, over time, with the air, with the nature,  all this makes POK as a cheese that invites you to discover it little by little. A cheese that brings together all the expertise and a traditional recipe of more than 100 years. POK Añejo, a 12-month-maturiting cheese made from thermized sheep’s milk. Its moldy rind transfers a special bouquet showing its penetrating flavour and with a slow and pleasant evolution on our palates.

Apariencia

Appearance

Roasted ivory color. Presence of a discreet number of uniformly distributed eyes. Its dark brown rind transmits an excellent bouquet and memories of maturing cava.

 

Aroma

The smell has an important reminder of warm and pleasant thermized sheep’s milk, which is complemented by touches of cooked butter and freshly cut hay.

 

Sabor

Taste

Clean and penetrating taste, with perception of the lactic and shades of salt  between the elemental flavours, but balanced, reminiscent of well-developed sheep’s milk curd, with a spicy sensation that intensifies the set of flavours. The long persistence, with slow evolution, very pleasant and subtle until its disappearance in a way that it leaves a pleasant memory that invites to repeat the tasting.
