Straw yellow with ivory tones typical of La Mancha sheep’s milk.
Discrete number of small eyes of fermentative origin distributed by the matrix of the cheese.

Aroma
The smell has an important reminder of sheep’s milk: warm, sweet and pleasant, complemented by touches of cooked butter and roasted and toasted cinnamon tones

Taste
Sweet, balanced and intense in flavor. Sweet flavours stand out with marks of caramelised nuts typical of fermented and matured sheep’s milk.

Texture
Compact with moderate elasticity. Melts in the mouth and is slightly buttery.
