Sensory Qualities

Appearance
Pale yellow color with ivory tones typical of the delicate coupage of milk.
Numerous small eyes are uniformly distributed.

Aroma
We find roasted and dried fruit aromas mixed with lactic-caramel sensations and brief memories of the cellar and ripening cave.

Taste
Very balanced in flavour highlighting sweet flavours with marks of caramelized nuts typical of the ripening of sheep’s milk rich in the mixture. Creamy notes emerge with hints of goat.

Texture
It has rough shades, but is very melting on the palate and with some elasticity. When the paste is broken by hand, the original size of the curd grain can be appreciated.
