Aparience

Paste of an intense matte white color typical of goat’s milk.

It has numerous large eyes of mechanical and fermentative origin, uniformly distributed throughout the matrix of the cheese. Near the eyes, you can see the satin white curd grains, with the original size determined in the manufacturing process.

Aroma

Fresh smell, Clean and smooth. Brief lactic tones of fermented cream mixed with primary aromas of fresh goat’s milk and animal memories, of freshly cut hay and raw mushrooms.

Sabor

Taste

mooth, frank flavor, with short lactic beginnings. Very clean in the mouth with hints of goat’s milk and a correct point of salt.

Elegant animal souvenir tinged with hints of almond and floral tones. Great olfactory-gustatory persistence of goat’s milk cream.

 

Textura

Texture

The paste is very creamy, melting on the palate and with a certain elasticity, but resistant to cutting.

Suggestion of consumption
