Aged 10 Months

Our Cheese Aged 10 Month was born from the concern of our Master Cheesemaker to have a cheese with 10 months of ripeness, an intense flavor marked by caramel and roasted tones. The blend of milk, rich in sheep’s milk, gives it character and aroma, a different personality from other cheeses with this type of maturation.


Appearance
The interior offers a straw-yellow paste with shades of honey and ivory

Aroma
In aroma it has an intense profile and a great variety of roasted and dried fruit smells mixed with lactic-caramel sensations

Taste
In the mouth, sweet flavours are enhanced with caramel and toasted marks thanks to the maturation of the sheep’s milk rich in the selected mixture.

Texture
It shows an unctuous paste, but with slight rough nuances. Resistant to cutting.
